What a piece of trash put a pork shoulder on at 8am six hours later the probe was showing 163 but it didnt look right. Ran to lowes bought a digital therm and did the boil test it was 212 then i put it in the meat and it showed 137 WOW. I guess for $450 dollars i expecting more. Butt going in the trash:(
 
Sorry to hear about your pork shoulder, that sucks. If the temp read out can be trusted... I think 250º or a tad higher for a large size of uncured meat would get you through the 40º to 140º in 4 hours hour time period safely.
 
 
Thats what I do.  I have one of those cheap mechanical over therms that sits/hangs on a rack.  Just to reference against my readout.
