MES 30 and AMZNP Help!!

  1. smoking some ribs on my smoker. First I preheated the smoker for 1/2 hour. @ 225 planning 3-2-1 method. I then loaded smoker with pork ribs as quickly as possible. Ribs been sitting thawed and room temp for at least 2 hours, dry rubbed. I proceeded to light AMZNP in the mailbox. Got her nice and cherry and it is smoking away. It has been an hour and the smoker temp is barely at 198 degrees. I have it set at 240 which has been good to keep box temp around 225-230 on this particular smoker. I am using two separate temp probes.both in different areas in the smoker. Both probes are around the same . not near set temp,but has been climbing since the start but very slowly. My question is this, if the holes in the mailbox happened to be too big could this cause too much fresh air in smoker and cause temps to stay down.? I say this because when I was drilling holes in front of box ,I kinda messed one up so I had to drill it bigger than I wanted. but the AMZNP has never gone out. If this is the cause I can close them up a bit
     
  2. Here's a couple pics of the set up. I put some temporary foil to close down the holes but I did notice that hour and a half in the AMZNPS has 3 inches left

    The additional air shouldn't be making the temps that low. I could see it causing the element to run a bit longer but it still should be able to get up to temp.

    Is the element running constantly or is it cycling on and off?

    My Gen2 MES has a red light on the panel that is on when the unit is heating.

    Have you cranked the temp setting to 275 to see what happens?
     
  8. yes the red light has stayed on constantly. The smoker digital display says 235 the probes read 203 and 198. and its still set to 240

    How old is the unit? Your heating element could have some corroded connections which seems to be a common problem on the older Gen 1 units.

  12. I cranked it up to 275  and there is still no climb, what gives? I have the vent 3/4 open on top. I removed interior housing around chip loader and only left the tray on top of heating element. water pan has playsand and wrapped with foil

    If the control panel is trying to run the element but it is not getting hot than you must be having problems with the heating element itself. If you need to salvage the ribs you can always transfer them to the oven. Once you are done smoking you probably need to take the back panel off and check the wires to the element to ensure you have continuity. 
     
  14. Okay it finally started to increase, it has gone up 5 degrees so far

    How many racks do you have inside? A large amount of meat mass will keep the temp down at first.

    4 racks and have been on @ around 200 for 2 hrs 15 min
     
  17. This is like the 10th smoke on unit.
     
  18. Its been slow but is at 215 now and rising. does it seem unusually slow? I usually set it at 240 and it maintains 220-225 pretty good. I set it and left it. I then noticed it never got to temp. The only difference is a couple of mods. a heat deflector and AMZNPS with the mailbox. maybe I need to set display temp higher? Or maybe there is a problem? as we speak it hit 219

    Four full racks on a MES 30 is quite a lot.

    Sounds like things are taking off now, though.
     
  20. yeah the racks are just holding half a slab of pork ribs, the smallish 30 racks cant hold a full rack unfortunately. so I just put half per rack
