Eddie, there's no practical way to answer the question without having some idea of your anticipated usage and budget.

There will be different answers appropriate to someone who may do 20 pounds of sausage per year and someone like myself who processes 4-5 deer a year, makes sausage often etc.

I have a 1 HP commercial Globe Chefmate.  Retail cost for the grinder with accessories (plates, knoves etc) is pushing $800.

My neighbor processes a few deer each year and has .35 HP LEM that does just fine for him.

My brother in law makes a few 8-10 pound batches of sausage a year and does fine with a hand crank grinder.

Frankly, if you are going to make sausage once in a while and not do large batches I'd recommend a good hand crank grinder and put the money saved into a good stuffer.  The work saved and the improvement in consistency with a good stuffer is well worth the cranking on the grinder.
