what is your favorite meat to use for making a fatty? I would like to make one but I'm not sure what to use for this. If you have any favorite recipes that you would like to share that would be great

Breakfast sausage, or italian sausage, with pepperjack cheese for my favorite, dusted with my butt rub and spun up in the company of bacon. A nice and warm, friendly love affair!
 
I've never made a fattie yet, but from what I've read it appears pork sausage is the most popular.

My observation .... may be skewed by TBS ...

how many lbs of meat do you use?

I believe the minimum is 1# when they're stuffed, but you can go smaller if you want little fatty bites... just need to monitor them closely cause they'll finish before the big ones.
 
the sausage chubs come in 1 or 2 lb hunks.
Roll them out in a 1 gallon ziplock back untill sqaure and even, then use a sharp knife and cut the bag at the seam, fill the square with the stuffing ingredients, pull up the end of the bag to the other and start the rolling process. Smosh in the ends and continue rolling. Mend the ends together to make it"seamless" Season with your favorite rub, roll in bacon, and slide onto the smoker grate. 2-2 1/2 hrs later at 165 internal, they are done. Wrap in foill, and let rest for atleast 45 minutes , then slice and stand back. It will be gone before you get 3 slices for yourself. If you don't wait, the cheese will run out of the middle!

You need to figure out how many people your going to feed. Sort of like cooking hamburgers. How many can Earl eat, and so on. What your going to fill it with can be filling as well. Left over fatty is always a beautiful thing. I think lots of folks use pork sausage or mix it in for the fat content(moisture). Good luck. Only an opinion.
 
I assume that you smoke at 225? about how long does it take to do 2lbs?

Just to throw my 0.02c in ........ i have done one with ground chuck which turned out just fine.

My fav is still italian sausage tho, i find that 2 lbs works good.

One tip ...... make two cos the first one will go real quick. Leftover fatties are awesome for snacks and lunches.

what they all said..I like mozzarella cheese with ham on top over the other thing I put on the inside. the cheese does not melt and run as easy as others and taste great to me.
 
Thanks for asking, Im making my first fatty today myself. A little 1lb'er but I dont have stuffing nailed down yet. Not sure what I want to try first.

I have never made one, but was wondering if anyone has done so with a mix of ground beef (like chuck) and sausage? Any recommendations ?
 
Fatties are excellent by themselves as well. Sometimes I'll just smoke up a Jimmy Dean plain sausage roll with nothing in it, and that in itself is a great snack. Crumble it up and put it in scrambled eggs or an omlette if there is any left over for breakfast is always really good too. The best thing about fatties are they are great untouched and they are great stuffed as well. The other great thing is that you are only limited by your imagination. I always keep a few extra rolls of Jimmy Dean around for whenver I fire up the smoker.
