In a thread about smoking some pork butts, I mentioned that I was going to use my brand new Wolfgang Puck Roaster pan in the MES40 to smoke 2 butts over cut up onions, celery and carrots (mirepoix). Everything worked beautifully until I tried to put the roaster in the smoker. It's too big!!!!!
Only an old fool like me would not have tested first to be sure the roasting pan would fit. ! It is about an inch too wide from side to side, but I might have fixed that with some judicious bending of the handles. But no! The problem is that its about 2" too wide from front to back. The door will not close.
It was not a complete disaster though. The rack that goes into the roaster pan will fit inside the MES. I just swapped the veg into the MES drip pan and kept on keeping on. I'm not at all sorry that I bought the roaster, though, because it makes handling things so much better than the cutting board I have been using. It has handles making it very easy to carry and the sides are about 2.5" deep so things don't fall out.
Yesterday, when I was prepping the butts, the rack made a convenient place to sit them for the mustard rub. It almost fits across my sink; so mustard was contained. The best part was that applying the rub it didn't fly all over the counter and make a big clean up job. I placed the rack of mustard covered meat on the counter next to the roaster pan and then placed a butt in the pan and covered it good with Jeff's rub. I then laid a piece of HD foil on the counter and placed the rubbed butt in it and wrapped it up good. Repeated for the second butt. Two cups of rub was a bit too much but I packed it on as thick as I could. (There are pics here.) They sat in the reefer overnight and I put them on at about 1:00pm CST. I have TBS coming out the stack (Thank you! Todd!) and the Mavericks reporting on progress. Smoker is set at 235° and remotes are reading meat temp at 34°. They probably won't be done until the wee small hours.
