Just bought MasterBuilt 560 and have grill completely full and set to 200. Noticed it swung between 192-194 so set temp to 210 and now it is around 200. Is this normal when grill completely full?
 
That's the way the controller works. It is a PID. Set a temp, it will go past the temp target, cool down past the temp target, heat up to or slightly higher than the target. Once it settles in to the target, and if the lid is kept closed, the temp will stay within +/- 2 degrees. More you open the lid, the more the temps will swing, but recovery will take less time
 
The cold meat is a heat sink but as it warms up the temps will come closer to the set point and this applies to any smoker , the good thing is the electronics adjust the temp for you, makes life easier for the cook lol no chasing temps

I see so many people that don't understand how a PID works, that get into a frenzy when the temps go above their set temps. They start twisting dials, changing settings, and that makes it only worse.
