is there any tricks to using a rib rack? I'm doing two racks of ribs and dealing with limited space. Do I need to turn them over?
Biggest thing is to make sure that the ribs don't touch each other as it interferes with smoke penetration. Whether or not to flip them kind of depends on your smoker. Just keep an eye on them and pay attention to the color. If it looks like the bottom of the racks are cooking more than the tops, then flip them.
