Last Saturday I used my new wireless thermometer for the first time. The results I got were unbelievable, no average the temp difference between the Maverick and my thermometer that came with the smoker were about 50-60 degrees off. So if that information is accurate then I have been cooking my ribs at around 325 for 5 hours… (not what I wanted to be doing) So my main question was that it was windy yesterday does wind have an effect on my COS obviously it does, but I just did not expect it to be that much.

I recently just bought a mes 30 and the mav 732 thermometer.  I have only done a dry run but i also noticed about a 45 deg difference with the mav measuring at grate level vs the built in thermo on the mes.  I have a feeling once meat is in the smoker it might even out a bit.  The positive is that the smoker runs hot not cold which should be good for poultry.
 
My mew MES is also running about 10% high.That's good then. A smoker that tops out a 300 instead of 275 is more useful. I will make a conversion chart of sorts, different temps and their respective readings. I can live with that. I like crispy chicken skin.
