Howdy!

My wife bought me the smoker I have always wanted. She got me the Masterbuilt XL smoker from Bass Pro. I love it already. I took heed of everyone's warning about the door leaking smoke and went to Ace Hardware and bought the wood stove door gasket. Worked like a champ! It's all cured up and ready to go for tomorrow!!

I am a little nervous because I am coming from a Brinkmann electric smoker and that sucker is plug and play. This one I'm nervous about getting it too hot. The Brinkmann doesn't come CLOSE to the heat output this bad mamajama puts out. Ill be doing 2 Boston Butts tomorrow and 3 racks of spare ribs. I can rock the Brinkmann lol but this Masterbuilt is a little intimidating. Any tips would be greatly appreciated!!!

PS: I attached pictures of me installing the gasket. Hope this inspires other people new to this smoker to do it because its great!!

get rid of the chip pan and use a cast iron pan, put brick on the bottom to raisethe pan and to help hold heat when you open the door.  Hmm what else.  get a remote therm.  Some guy have added needle valves but i didnt want to mess with the gas lines.

I had an old pie pan I was using from my Brinkmann and I just sat that on the factory wood chip bowl and that worked pretty good. In the past, I bought one of those cast iron trays wit the lid. Should I use that instead?

Can you better explain this brick technique?

I assume you mean to stack the brick around the burner and set the pan directly on that?
