I have had this smoker for few months. This the third time use with same problem. Have it set at 250 and running about 195. I have 3 probes in it this time all reading about same. My 30 is rock solid. What are my options?
 
Have a corned beef point on 2nd from top rack. Last time rack of ribs. Turned up to 275 and now running 220.

Contact Customer Service. Easy fix, new controller. More involved, the cabinet temp sensor...JJ

That's a pretty big difference in temp even for an MES.Check your therm with the boil test...212 is boiling.You might need to re-calibrate it.

Weather can be a factor too.Wind and air temp can be a factor.

Just saw the pic,what's in the pan above your water pan?It looks to be filled with a liquid.
 
Is the element cycling, (“heating” light going on and off)?
That’s a big pan of water in there, and steam is never gonna get hotter than 212 unless you pressurize it.

Not using liquid Just pan to catch grease and pretty much empty. Image just looks like has liquid. I sent message to support.
 
So I pulled meat to finish in oven and pulled that foil pan out which was empty and closed back up. Temp went to 270. Meat was above smoker probe and pan below it on bottom shelf. My probes where on same level as smoker probe with one right next to it. Makes no sense to me. I use foil catch pans in 30 with no problem. I put mailbox mod together today. Going to hook to 30 and just use it unless doing something big. This 40 been a pain! Heater stuck on once and had that error saying to cold operate even though was 50 degrees outside.

I took chip loader out today trying to get mailbox going. I foiled water pan. No more catch pan. Almost needs a fan inside. Will try one more time. Now that I have mailbox I can go back to the 30. Temp always rock solid on it.
