I am having a problem.. with lowest setting on the temperature dial... I am getting 375F reading .. I want to get it to 250F so I can smoke some ribs...  I currently have the damper almost closed and I am still maintaining 357F... what can I do to lower the temp ?  for smoking some baby back rib ?

any ideas ?  or just cook them at 375F for 1 hour ? 

I have few chunks of pecan wood... not sure if it was the wood... I will just dump one piece in next time.
