Just started using my Master Forge vertical propane smoker again. I smoked some spare ribs today, and bunch of brats. Everything came out decent, but felt like I was constantly adjusting the propane/flame to maintain temp at about 225 - 250. Only mod to the smoker is a gasket for the door that I installed when I 1st bought it. Should I expect more consistent temperatures with this smoker, or is this as good as it gets?
 
Not sure what the chip/chunk pan looks like on yours.....But, you can be getting a flare from there that is making your temps jump. Post a pick of the inside of your smoker and we'll see what can help you with.
