I have no problem ramping then heat up on my smoker. My problem is getting down to 225 without almost turning the burner off..Low to the point that a breeze will shut it down..What is the secret to going low and slow?
I don’t have one but just sharing what I’ve read, most folks put a needle valve in the system for better flame control and add a heat sink ie a thick piece is steel or pan of water. You could also put a couple of fire bricks as well. The heat sink will help calm the temp a bit.
the other thing is if it likes to run at any constant temp under 275 I wouldn’t even worry about it. Just enjoy the time savings while smoking. 225 is the the ideal temp for a lot of cooks but it isn’t the end all for a good smoke. Truth be told I smoke way more between 250 to 275 than I do at 225....

Is the Needle Valve inline before the regulator? Where can one of those be purchased? What size? For me just the slightest adjustment on the control swings it from 175 to 275 in a 1/8th" movement..I only have the stock chip tray on there and using a Kaduf smoker tray..

The needle valve goes after the regulator, amazon sells them or the local hardware store. Just be sure you follow all the rules for gas lines and be sure to do leak testing as such before you fire it up.
