Marinated / Smoked Chicken thighs

Well I had 10 pounds of thighs that needed to be cooked so I took the skin off of them and marinaded them in 1/3 red wine vinegar and 2/3 soy sauce for about 2-3 hours in the fridge . Then I placed them on the smoker racks and seasoned half of them with Cajun seasoning and the other half with some new spice that my buddy gave to me to test.

Well there they are with some fresh veggies right out of the garden, Parsnips , Carrots , Spinach , Beets and Asparagus. Marinaded about 3 hours , I think another hour would be better.

Sorry I just try to eat as healthy has I can and then some. Wish the sweet corn was ready but that ain't gonna happen for a few months

Ain't much on this planet I don't like but beets are there for me lol. Wife loves them. I know they are super healthy but nope. Awesome you have fresh veggies this time of year. Won't plant my garden till april
 
Just pulled the last of the fall/Winter carrots and Beets and still picking spinach and Parsnips and the Asparagus is just starting so I will be cutting it for a couple months. I have Peppers , Tomato's and Eggplant in the cold frame and the peas should be ready to pick in a week or so. I have potatoes, Cabbage and more Carrots and Beets in the ground for spring. I don't plan on getting caught with my pants down this year with any shortages at the supermarket.

Nice looking Chicken. That marinade sounds good, I'm always looking for a strong Chicken flavoring. Gonna try this one. How do you think that would work just grilling?

Should turn out nice! I found out about this recipe at work. A guy offered me a piece of chicken and it was fantastic. It tasted better cold. And he used a cajun spice for some kick. My wife makes a cabbage salad with slivered almonds and sesame seeds with chicken so I wanted to try this smoked chicken in it. I will post the pictures and give my results in a day or so.

Good to know. I smoke Chicken in my MES and I haven't been liking it as much as grilled. But it's much easier to overcook on the Grill than the Smoker. Thanks for the info, definitely gonna try the marinade, but longer than 3 hours like you suggested.

Man that is one fine looking meal. The chicken looks nothing short of amazing but that plate is to die for. Excellent work.

Beautiful work! All around amazing meal and beautiful plate. I am jealous of the garden this time of year too. Good call on removing the skin of the chicken for the smoker. When Im not eating healthy I never am happy with the skin on low and slow, I dont know why I never thought to remove that factor all together. Thank you for sharing!
