I did some searching on the forum on smoking woods, very helpful.  The question I have about maple is does it matter what type of maple you use?  I have some maple that I cut down and have been burning in the fire pit.  I have know idea what type of maple it is.  Any thoughts?
 
Maple is good. The only thing is, the bark can be bitter, so smoking with small-diameter pieces can give a sharp edge to the smoke flavor.

It can handle beautifully, with a nice straight grain that's easy to split down to chopsticks if you want.

For the last half year, I've been smoking with sugar maple from a storm-felled tree that I was paid to remove. Recently I went back for more work and I was able to give that home owner a piece of pork loin smoked with her wood, she loved it.
