Probably Apple wood yea they are essentially pork shoulder sliced. 4 steaks almost 4#👍👍
I see you removed the connective tissue. So the steak won't curl up. Many moons ago butt (shoulder) steaks were my favorite steaks. I still enjoy them. Fast and hot.
