I';ll do my best without the recipe she has. My kin folk are from red-dirt tobacco country in VA.
Basically the VA version is a chicken stew with butter beans, corn, tomatoes, and broth(and things i cant remember). When i was a kid my elders made it in a big cast ion cauldron, sometimes over a fire. The are many versions throughout the South, but this is what i remembered. I'll try and wrangle the recipe from her. it took her a few years to cook it like granny did.

I need to try this. Here are a few more I found for ideas.

 
Good looking bird....My problem with doing a bird like that for pulling and using in recipes is I eat on it as I'm pulling....Tends to cut down on the amount used in the recipes!

Most recipes i see say go to costco and buy a $4.99 rotisserie bird.... LOL
