Made these last night

Bone in thick cut pork chops on my kettle!

Brined overnight

1/3 cup salt

1/3 cup sugar

3 cups water

Splash of apple cider vinegar

Rub 2 hours before cooking

Season Salt

Onion Powder

Garlic Powder

Paprika

Pepper

Brown sugar

Seared 5 mins each side


Indirect heat, top vent half closed, small chunk of hickory, smoked for 30 mins to IT of 140-145


Nice and tender like a Ribeye steak!
 
We did some brined pork loin chops in the Weber last night our selves.  If you aren't brining your pork you're really missing out!
