Been lurking on here for awhile, just never registered. I have a Traeger Pro 22 that I do the majority of my cooks on. I also have a beat to heck small charcoal that is being replaced with a Kettle soon as the bottom has rusted out. For quick fixes I have a Weber Gensis II 3 burner. I've been smoking for three years now and have started to get more serious about creating a high quality meal. I have started logging my cooks, looking to upgrade my temp monitoring gear, and am dabbling in making my own rubs. I have a friend who is a Comp smoker so its great to learn from him and taste what hes cooking up all the time. Favorites to smoke are Beef Shorties, Butt, and Baby Backs. I prefer to do all my ribs unwrapped and have just started recently wrapping butts and am liking what I'm tasting. Poking around here for ideas I think I will be getting some Pork Belly tonight for PBBE this weekend.
