This one is just for you guys. I'd hate to disappoint
Decided to make some thick sliced center cut chops yesterday but wanted to stuff them with some yummy goodies. Tracy will eat pork on occasion but it's not one of her favorites unless it's smoked pulled pork so needed to make something low key and simple but also special.
Started by frying up some homemade pepper crusted bacon
Butter and flour for the roux that's going to be my Italian themed gravy
Add some heavy cream, milk, and a bunch of spices
The chops
Slice the chops open and add the first layer of Pecorino Romano cheese (next couple of pics are kinda funky). You can see the chopped bacon on the cutting board.
Add bacon that's been chopped up
At this point I'm at an impasse. Still want to add more cheese but there's no way I'm gonna be able to cook these laying flat on the smoker. All the goodies are gonna fall out. Need to come up with an alternative. Scratching head....thinking...smoke starting to emanate from ears...VOILA!! A brilliant idea...or so I thought at the time.
Let's break out the stainless steel taco holders, then add the last layer of cheese
Baste with a good dose of spicy Italian dressing
Now they go on the Rec Tec
Gravy about done. This stuff was to die for!!
Cut up a nice salad
Had to check and see how my improvised cooking technique was working. Looks good so far
Chops all done. I'm very happy with the way they look
While all this is going on I made a cheesy broccoli rice and pasta dish. Time to plate dinner
Money shot
Chops perfectly cooked, juicy and tender. The flavor of the bacon and Romano cheese was insanely good melded with the pork. Loved the rice and pasta side. A perfect accompaniment for the meal, and of course there's no going wrong with a nice salad. The gravy however was the runaway star of this meal. I don't know if Italians are famous for their gravies but they will be after this one
All in all, this was a very good meal. The fun part is that the use of the taco holder has really started the cogs turning for all kinds of different things to make. The doors of creativity just keep opening!!
NOTE: Bear and Chop, I was sitting here laughing my butt off when I read your comments in the Easter thread. Knowing I was gonna be posting this due to the unique and creative aspect, I decided to do it in a way to make you guys proud
