Low Key & Simple Vertical Stuffed Pork Chops (W / Pics)

Well here ya go Bearcarver Bearcarver and chopsaw chopsaw This one is just for you guys. I'd hate to disappoint :emoji_wink: Decided to make some thick sliced center cut chops yesterday but wanted to stuff them with some yummy goodies. Tracy will eat pork on occasion but it's not one of her favorites unless it's smoked pulled pork so needed to make something low key and simple but also special.

Started by frying up some homemade pepper crusted bacon

Butter and flour for the roux that's going to be my Italian themed gravy

Add some heavy cream, milk, and a bunch of spices

The chops

Slice the chops open and add the first layer of Pecorino Romano cheese (next couple of pics are kinda funky). You can see the chopped bacon on the cutting board.

At this point I'm at an impasse. Still want to add more cheese but there's no way I'm gonna be able to cook these laying flat on the smoker. All the goodies are gonna fall out. Need to come up with an alternative. Scratching head....thinking...smoke starting to emanate from ears...VOILA!! A brilliant idea...or so I thought at the time.

Let's break out the stainless steel taco holders, then add the last layer of cheese

Chops perfectly cooked, juicy and tender. The flavor of the bacon and Romano cheese was insanely good melded with the pork. Loved the rice and pasta side. A perfect accompaniment for the meal, and of course there's no going wrong with a nice salad. The gravy however was the runaway star of this meal. I don't know if Italians are famous for their gravies but they will be after this one :emoji_wink: All in all, this was a very good meal. The fun part is that the use of the taco holder has really started the cogs turning for all kinds of different things to make. The doors of creativity just keep opening!!

NOTE: Bear and Chop, I was sitting here laughing my butt off when I read your comments in the Easter thread. Knowing I was gonna be posting this due to the unique and creative aspect, I decided to do it in a way to make you guys proud :emoji_laughing:

Wondering what the fallout from this one is gonna be,

Taco holder stuffed pork chops....speechless! They look outstanding man! I like that gravy too I might have to make a rendition of that for Easter. Low key and simple :emoji_laughing:

Thanks john!! The taco holders were a case of any port in a storm...or necessity is the mother of all invention. didn't really invent anything, just re purposed an existing invention.

That gravy was outstanding!! I will be doing that as part of our regular rotation.

I completely understand what you're saying Bear, but the whole concept of this was sarcasm...poking fun at myself, and proving you're correct of course. Seriously, it was just a continuation of the good natured fun you started in the other thread. I knew this was a bit of an over-the-top meal, just intentionally down played the title of the thread for the sake of humor.

I actually do make a lot of low key and simple meals, I just don't post them. Too many great meals posted here and something like a basic burger would get sent into obscurity in an eye blink with so many great things people showcase.

Very ingenious use of the taco holder!! I really need to order one or two of those. The sauce I’m sure is awesome and man that stuffed chop with the cheese and bacon, all I can say is Hell yes!!

My problem is if I stopped posting My Mediocre Meals, I wouldn't have anything to post.
My Great meals are mostly in my past, because I just don't get around good enough to spend a lot of time on my feet, or running in & out to the Smoker. I have guys who used to haunt my Threads who rarely even show up to say as much as a "Howdy Bear".
I understand my posts are Boring nowadays, because they're mostly done in or on one of my new Indoor Toys, but I can't help it. I'll still do a Super Prime Rib now & then, but not much other Great Smoked Stuff, like I used to do. The only thing I'm any good at any more is "Writing Them Up".
My Dad never cooked, My Mother was a Terrible cook. My Grandmother was a Great cook, but I never got to hang around with her, so what you see is what you get from me.
Throw in Agent Orange, and Heart, Lung, and Kidney problems, and I'm doing good just getting here every day. So I wrote the book on "Low Key" and "Simple" meals, and you can look through all of my Thousands of Threads, and you'll not find words like "Roux" anywhere.
