Did my first cheese a couple of weeks ago and it came out great!  Had a block of extra sharp cheddar, mild cheddar, colby jack, pepper jack, swiss and a few string cheese sticks.  Used People's Choice pellets (hickory & apple). I had a little trouble keeping them lit, but that's probably a learning curve issue.  Aged it for two weeks and it had a nice, light smoke taste.  Definitely won't be my last batch!  Thanks for all the tips on this site!! I agree, smoked cheese is a definate treat for gatherings... around here, people think we went to "Cheese Haven" in Port Clinton and spent mucho$$ for It , but in actuality the price was over half off (plus time spent) and "better" than C-H's. And the selection is bigger.

Now, when you finally decide to share some...you'll find you have to do a load a week , just for close family and friends.
