Did my first cheese a couple of weeks ago and it came out great! Had a block of extra sharp cheddar, mild cheddar, colby jack, pepper jack, swiss and a few string cheese sticks. Used People's Choice pellets (hickory & apple). I had a little trouble keeping them lit, but that's probably a learning curve issue. Aged it for two weeks and it had a nice, light smoke taste.
