 Hello everyone ,

  Ok so I am smoking some venison today as well as some steak jerky , and my wood keeps on lighting on fire , what gives ? I soaked it overnight like I always do with the Mesquite.  I usually use the large chunks of hickory first then when I have good ashes add the smaller pieces. I am maintaining 225 for this episode , of smokeology , and I have pretty decent smoke , but the wood keeps on lighting on fire . Any chance that something is wrong with my setup ?
 
I had the same problem with my gas smoker but I put my wood chips in a iron skillet wright on top of the normal wood tray and the fire stoped.  

10 inch skillet fits my smoker perfect.
