Thanks everyone for looking. Cheese turned out good.(had to sample just a little). Rested it uncovered for 2 days, packaged ad refrigerated last night. Salt nice and smoky, might throw in the smoker again, haven't tried a peppercorn.

Rinsed, soaked and peppered my bacon this evening and is sitting in the fridge uncovered until tomorrow, when it goes into the smoker.

4 Pieces in the picture on the right, Pop's Brine. 3 pieces on the left, Mr. T's Tender Quick cure. One piece of Mr. T's recipe not shown, wouldn't fit on the pan.
