am going to be doing Cheddar Monterrey jack pepper jack and Swiss with the AMNPS and was wondering what type of pellets you guys would recommend me and the family have been happy with the "Stubbs BBQ blend" chips but I want to try new combinations so please tell me what your experience has lead to.
 
ok went looking around the forums and saw a few mention the pitmaster blend so that's what I loaded and although its only been about 10 minutes I am VERY impressed it is 38 degrees and with the vent as well as chip loader pulled part way out am cranking TBS at a whopping high of 42 degrees. THANK YOU GUYS for constantly steering me in the direction of AMNPS and to Todd for making the finest product built to suit the need I have ever used it is exactly as it is offed AMAZING.
 
 
Try some peach pellets next time. I've used PC, Apple and Peach on various cheeses so far and although all are good, I like Peach the best. I usually wait at least a month before I break into the vacuum sealed bag of goodness. Be careful though, it can become addictive. ;o)
 
Mine get wrapped and bagged for a 2 week waiting period then only one block at a time. the older blocks are kept from every batch are set aside for special occasions ( like when I decide share some for a change )

You wouldn't go wrong with pitmaster.

For cheese in my house, we use maple and cherry.

Experimenting is half the fun!
