thanx for the info chris- last stainless was 20" schedule 60 400(if i remember right) pipe in a refinery- i remember trying to put a 38 degree landing on reused pipe in a sulfur unit( 400-1000) degrees. i ran a 12 hr nightshift w/ a 13" grinder for 6 weeks....this stuff was so warped.. there was no redoing it- but that was our job-

so off topic i went but as chris said- stainless whether it's surgical or basic(for lack of all between terms) the iron content- the magnetic....all metal has pores. and if it is too pure for any iron content- i (personally) wouldn't fel safe cooking on it-unless we're talking surgical steel & that just ain't feasible......

Not to call you out on the mat (but I love to wrastle), but you say you would not feel safe cooking on stainless steel without knowing what its purity's are (but we, you and I am assuming) smoke our stuff on whatever?

only stainless i ever dealt w/ was in refinerys w/ bad stuff running through it. now as far as any pit i have ever cooked on it was plain old steel- cold rolled or cast iron d.o.'s that i trust- just my opinion- but i have seen heat & flame color coming off different stainless- just looked weird to me.i can't explain it but it just didn't look right.... the closest i can explain it is the flamethat comes off a sterno log- that yellow blue impurity color flame... i'd never cook over that..but like i say- thats just me.

Tell ya' what, if I were you, I'd at least use one of the 4'x4' sheets to make two 2'x4' work tables for the pit area. The odd sized piece would be a good candidate for cutting into whatever accessories/tools you can think of.

As for the other 4'x4' piece... well, you could ship it to me... I'll figger sumthin' out for it...
