Looking for a GREAT chili recipe.

I've been having cravings for some good chili recently, but don't have too great of a recipe. My buddy used to come over and we would make it twice a year during football season and have a bunch of guys over, but he's moved to DC and now I dont have his recipe. I like something with a little spice, but not too much as my wife won't eat it then. I can always add my own stuff to it to make it spicier.

I don't want any pre-made chili, or chili in a can.

I prefer to cook down the ingredients the way it's supposed to be made.

Anyhow, if someone would be willing to share their knock-out world famous chili recipe, I would be much obliged and Im sure others would too.

BC I have a good one but I'll have to jot it down for you when i get a few minutes. It has a lot of different peppers in it and you can adjust the heat by leaving some out for less or adding them all for the real deal. I'll pm ya when i get it done.
 
30 minute chili. 20 oz can of whole or crushed tomatos, 1 onion, 1 can tomato juice large one, 2 pounds ground beef your choice on the leaness, 2 cans red kidney beans. If you want to add some green pepper that is good also.

Brown beef with 1 onion, add tomatoes and crush, then the tomatoe juice, add garlic to taste and some chili powder to taste, I use Dark chili powder from Mc Cormicks. When it tastes good add the kidney beans to heat, they are already cooked. It is ready to eat in 20 30 minutes or you can simmer it down to your preference.

My dad always said I should open a chili joint in Chicago, maybe I should have listened to him. It is also good with elbo macaroni = Chili mac.

This is very close to Wendy's chili which I think is good for commercial.

Try it or maybe you are looking for a different type, don't know.

is good with Anchos in it.

I take some anchos, stem and seed them, cover (barely) with water, warm that up till they soften, then throw them juice and all into the VitaMix. Pour that in ANY chili recipe and you got your self a winner.

Anchos, Beer, Cumin, garlic - can't go wrong with any recipes if you add those.

Now excuse me while I go and try some of the World Class Chili recipes and Jeff's right now.

I have a very simple, elegant Chili Verde recipe I can post if you'd like. It has become a tradition to take a big ole pot to a new Mom so the fam can eat for a week and gives the new Mom a break.

Anchos! (anchos are the dark ones - local Mexican grocery has them or wally (dread)) the closer, shiny ones I believe are guajillos - also very good, but the anchos are smoked. Richoso is better to talk to about this.

Chili con Carne

6 dried Ancho chilies(stems and seeds removed)
6 dried New Mexican chilies(stems and seeds removed)
2 tsp Cayenne
1lb beef (chunck)
1lb coarse ground beef
1lb coarse ground pork
2 onions chopped
1tbs chopped garlic
1 tbs Cumin
1 tbs Oregano
1 tsp sugar
1 C Tomato Sauce
3 C Beef Broth

Cover Chiles with hot water and let sit for 15 min. In a blender place chiles and water and blend till smooth.
Saute the meat until browned. Add onions and garlic, cook for 10 min.
Stir in cumin, oregano, tomato sauce and the broth and simmer for an hour.
Add pureed chile paste and continue to simmer for 30 minutes. Add ground Cayenne to increase heat and add water if necessary.

Serve with coleslaw, corn bread and honey butter.

I changed a few things to this recipe. such as the meat. I added in a lb of chunked meat. Gives some different textures. I like to use 4 cups broth using the additional cup to soak the chiles in instead of the water. I also like to serve this over rice.
Forget using chili powder again. All the chili flavor comes from the dried chiles. Use the cayenne to bring the heat up since anchos and new mexicos are not spicy at all. (this dish is safe for family members that don't like spicy food. add your heat individually.)
Its an easy recipe to do yet gives a great chili flavor. I get requests for this quite often.

I just maded Tommie's World class Chili a week or so ago. It was fantastic. I'm not sure how to add a link. but do a search for " Chili recipe" Tommies chili will pop up. it's a STICKY in the side items area.

It beats up a 100 dollar bill but will last ya.

Our Deer Camp Chili with beans...is easy and dissapears everytime..So silly cause its so easy for non cooks..lots of college dorms..lol (Heat n eat!)
1 lb hamburger browned and diced onion saute'd

Add one envelope (Chili Mix) McCormick Chilo O's or Lowery's or etc..just warm to bring out the flavor for a minute.

Now add one can of Original Rotel tomato's (Mild or hot), two regular cans of Campbells baked beans, one can of tomato sauce, one can (14 oz) of kidney beans , one can (14oz) of ranch style beans..Dont drain use all the bean juice..Heat and eat..It will surprise you..Kids loce the mild version..lol (add hot sauce for more heat when served) Add some water to the pot if you want to thin it some..
 
I'll second this one. Just made a batch on presidents day myself, and ate the last of it about 1 hour ago.

Not just good, but great. I don't tend to use sirloin, but find that stew beef works good enough.
