Well I had to break it in today for a family Christmas get together. Turned out pretty well for the first round on the new MES and for a "get to know my machine experience." I could pick out a few chewy spots here and there but it stayed juicy and I got the skin crispy enough to have a little snap when you bite it. Took about an hour and twenty minutes because of a cold rainy day here in the Buckeye plus about 8 to 10 on the grill.

Thanks. I'll keep the sampling rule in mind. Still learning smoking craft a lot but the large archives of this forum help a ton.

The Mrs got me rytek's book (should have gotten it alot sooner ,coarse the upside is it is the 4th edition (saved me three books) LOL....now the next step when the bill comes in Mrs OS will see what she got me
