Long time since last post, fast brisket.

It’s been a long time since I posted. I just finished the busy time for work and finally got time to have a good cook. I picked up a brisket from GFS and wanted to smoke it on my 26” kettle. I’ve only done brisket maybe 3 times so my hopes weren’t too high. In a time crunch I gave it the “hot and fast cook”. The temps were mostly between 280*-300* highest I saw was 325*. I rubbed it with SPOG and a little bit of Montreal steak seasoning and Hardcore Carnivore. I got it on at 8am and didn’t put a probe in until about noon and at first it read 195*. I thought no way so I adjusted it. And it read 165*. Not sure if it was stuck right in some fat or what. But anyway. I sprayed it with a mop sauce that was apple cider vinegar, paprika, bud light and salt every couple hours. Then I wrapped it in foil and put another probe in and let it cook till both read 205* and 207*. Let it rest for about an hour and a half while I showered and got the smoke smell off of me. Turned out great. But enough talk here are the pics

Looks great , like it when things work out just the way it should

I could make a nice meal just out of that , OK maybe a slice or 2 of bread

Always a comment when I come in the house after just tending to the meals in the smokers shack.
Sometimes I shower sometimes I just let her get cranky about it , all in good fun though.

Nice looking brisket. The kettle is versatile. Especially the 26.

Thanks. I actually got rid of my 22” WSM for it. I caught myself using my 22” kettle more than the WSM bc of easy setup and clean up Still wanted the space for bigger cooks so the 26” was perfect.

Haha thanks DRK. The shower is usually for everyone, but at the end of a smoke I like to get that smell off of me before I eat. If someone else is smoking it doesn’t bother me it’s weird.
