Hello, all. My name is Jason, and I have a new smoking addiction. I lurked for awhile before joining, and still took a few weeks before finally posting. I received a Smoke Hollow 38" propane (i know, i know) smoker for Christmas. My first smoke was a couple of racks of baby backs. Flavor was good, but wasn't as tender as I'd hoped. Week 2 I did a pork butt. LOVED IT, as did the wife. Week three I did a full packer brisket. It was great, but not quite where I wanted. Week four, I did a full rack of spare ribs and another butt. PERFECT!  So far, I've followed guieds posted by @SmokinAl and @Bearcarver. I've used apple, hickory, and pecan chunks.  

My only complaint now is my coworkers bugging me for samples when I reheat my lunch! We came to an agreement. 2 of us have smokers, and a third is now considering one. We are going to start taking turns sharing our goodies.

I am looking forward to learning as much as I can on here.
