After years of searching, I finally found one.. a good, old-fashioned local butcher shop! Don's Butcher Shop on Mansfield Highway off I 20 Mansfield Highway exit! 817-535-0171. Heard about it from a meat manager I was trying to get some bellies from; they couldn't get them but he told me about Don's so I tracked it down tonight. Not fancy but a good sized meat case and lots and lots of sausages and smoked sausages, chili, butts, shoulders, briskets, spares, etc. etc.! I talked to Oliver, one of the managers and he showed me he could get anything I wanted, from calves tongues to whole or split hogs to steamship rounds, hog legs or untrimmed jowls, whatever I wanted, and with bulk he'd give me good pricing too! 2 pack pork butts, non-injected, $1.19lb - they were $2.08 at Wally's Sunday! So if you live near there don't hesitate to track 'em down, they're on Mansfield Hwy close to 20 on the left hand side going north, right next to the Sunset Hotel. Not fancy but a good ol'fashioned butcher shop! I told him I'd put out the word as there's lots of smokers in this area that would enjoy the opportunity to get away from the big box places!

Awesome Pops!! Great to hear they are still out there!

Thats great news... anytime you can support the small time buthcer shop thats a great thing. Butcher shops are becoming fewer and fewer. I live in Minnesota and just in the last 10 years we have had 7 small town butcher shops within 35 miles of here close down, due to the big name stores. So kudos to you for keepin the small shops alive.
