Any one have good recipes or ideas on preparing liver? I have heard soaking over night in milk mellows the "organ" taste to it and breaks down the connective tissues. Thought?
Milk or wine. Soak for couple of hours, dont rinse, cut into strips coat with seasoned flour, fry med-high heat in butter, throw in your sauted onions and your set.
Mmmmmmmmm! I'm one of the odd ones that absolutely loves liver and onions. Only problem is I am one of a very, very select few which means I havn't had it in years. Mom used to make it the best. She also used to fry chicken livers that were awesome.
Mom learned hers from Grandma. Grandma was a farm wife that had 8 farm hand kids, cooked on a woodburn stove, cast iron pots & pans. The ol' gal was the QUEEN of the dutch oven! But my mom could sling a great batch of liver and onions! Haven't had a good batch since I left home 20 years ago. She visits the grandkids every summer. One of her favorite dishes is a good pork tenderloin. I think I'll smoke her one if she'll agree to stink up the house with liver and onions!!

Another good use for chicken livers is bait for catching catfish. The trick to keeping it on the hook is either cheesecloth or thread wound around it, I prefer the cheesecloth method. Catfish can't resist it!
I worked in an Austins Steak House for 4 years and we did a mean L-n-O. We didn't soak it at all. Just good fresh liver with some flour and cooked on the flat top (when I cooked for Ma and G-Ma I used my elec skillet). Then sautead (sp?) onions and bacon. Back to cookin for Ma, I used a mixture of red and white onions and cooked them till they were nice and sweet. Some good smoky bacon and maybe a little A-1...MMMMMM. I might have to make this again soon after typing this out. Now I'm hungry for it too. DO NOT OVER COOK OR YOU WILL UNDERSTAND WHY SO MANY PEOPLE HATE EATING LIVER! Didn't mean to shout. Just keep it tender!
Others on here have given yall good idears on how to fix it, I like good liver n onions, that bein the stuff ya don't chew on fer a week. 2 pounds liver to 2 pounds onion with good butter, fine eatin.
