Little Heart Attacks and Spiral cut Hot Dogs

I wasn't sure where to post this cause it has some pork and some beef in it.

Just an impromtu company picnic for the gang from the boat shop.

I've been practicing up my Little Heart attacks for an upcoming event and it's been a while since I've done spiral cut dogs, so I decided to throw together a little lunch for the guys I work with.

Nothing special, really, but it was appreciated by the other bachelors in the gang.

I usually just use bacon for the little heart attacks but while shopping the bacon isle I found this strip sausage so I figured I'd give it a try.

I was late deciding to take pictures. I cut and smoked 16 all beef Ball Park dogs and cut up one round of Beef kielbasa. Wound up with 10 bacon wrapped and 10 sausage wrapped heart attacks, sprinkled them with turbinado sugar and topped with a chunk of pineapple.

There were 4 of us around the table and we ate all but one of the dogs. Everyone liked the chow. (Top load buns).

Smoked with hickory chunks in my WSM at 225 - 250 for about an hour and 1/2.

Other than that I figure the pictures speak better than I can.

Thanks for the like. I liked the sausage pretty good but prefer the flavor combination from the bacon.
 
I just had a BLT with 8 strips of thick cut bacon on it......what do doctors know? Lol
Boy; That sounds good to me. It's a little early yet for fresh tomato's up here in NC.

BLT's and Tomato pies coming soon.

I save my Doc the stress by not telling him everything. :emoji_wink:

That all looks great . Love the spiral cut dogs . Simple but they're really good .
I spent years trying to find the hot dog love I knew as a kid. Never did find it till I lucked into spiral cut dogs 10 or 12 years ago.

It's the only way I care to have them now.

Last night the mystery word was “Scrapple” and tonight it’s “Little Heart Attacks” and “Spiral-Cut Hotdogs.” I feel like tomorrow there’s going to be a pop quiz or something.

I’m assuming that you cut the spiral yourself? Is that a regional method? I’ve never heard of doing that but I like it.

Thanks for the like. I believe that I first saw the spiral cut hot dog on "The Smoke Ring" smoking forum probably 15 to 20 years ago. I cut the dogs on a large cutting board with a long and quite sharp "slicer". Here's a picture that shows how I started out spiral cutting. I no longer run the skewer through the dog. It's not a tough skill to develop just doing it freehand.

I'm really liking what you've done here. Although the concept isn't new, there's something about this one that has me thinking in a different direction. I have some homemade Hawaiian style Portagee sausage in the freezer that I bet would make a fantastic appetizer wrapped in bacon and topped with the pineapple like you did. Might be having some guests over next weekend and if so, I plan to make this.

Thanks for the like. I would realy like to hear how your take on these turns out. I can imagine that they will be much improved with higher quality ingredients, and your attention to detail.
 
What can I say but they look so good in so many ways! Great job! Next time you go to the Dr bring a plate of these along...see how much will power he has!

Actually what I have in mind is gonna be very simple. The Portagee sausage has pineapple in it to create the Hawaiian flair. I just think that would lend itself really well to a sweeter flavored bacon and the the pineapple you put on top. Simple but probably really good. If the meal happens, with what I have in mind, you can bet you'll see it here :emoji_wink:
