Received a package as a gift.

Never tried it.

Will season/cure a 5 lb batch.

Anyone tried this and can give me some idea of the flavor?

I like some heat in my summer sausage, but before i add extra red pepper, i figured id ask...

I had a pack I used like 7 years ago from a variety box of LEM seasoning.

So the flavor to me was like store bought corned beef.

My opinion was that I didn't hate it but I felt like it was misrepresented. If they called it "corn beef flavor/seasoning" then it was a home run!
To use it thinking "summer sausage" and then basically make corned beef logs made me want to punch someone in the face because I wanted summer sausgae hahhaha

I don't know if they have changed the flavor since then but I would doubt it.

So again, flavor was good but flavor was corned beef not summer sausage to me.
So I suggest you take your ground meat and form it into a loaf and smoke it and slice it for corned beef hahaha

I just made a 5 pound batch of summer sausage with elk meat (75 elk / 25 pork shoulder) and that same LEM Summer Sausage seasoning kit and I think it is excellent. Smoked it at 180 chamber to 165 internal, then ice bath for rapid cool. Would definitely recommend.

I have used it with good results but it has no heat so add the red pepper flakes
 
You guys that also used it, did it tasted like corned beef to you?
Just trying to figure out if they changed the flavor profile or not :)
 
Nope no corned beef taste for me

Just made 25lbs last weekend of the LEM summer sausage, I do not think it turned out very well. Not much flavor to the summer sausage, almost a strong salt taste, but not much flavor. I was kind of disappointed. I also smoked a 30lb batch of Hi Mountain summer sausage and love that one. Not much to compare Hi Mountain was the hands down winner.
