Smoked a rack of Baby Backs last night. Did a No wrap and they were pretty good. A tad strong on the smoke flavor and could have gone a little longer on the cook but I liked them. Not fall off the bone. Just a nice bite.

Looks good. Could you taste much of the horseradish in the finished cook?

Those look great!

The last two times I've done bbs no wrap the 1st came out great but the 2nd came out insane and the only difference was the 2nd rack stayed on about half hour longer and that was simply by mistake. Always learning!

I was thinking another half hour and they would have been perfect.
