So the Boss needed to run to the store yesterday. I figured I would go for the ride. Well the call of the meat department was too strong to resist. I found the pork loin and a package of chicken wings were too lonely and they needed to come home with me.
Did not get much time to do any pre-prep. So rinsed it and rub with my pork rub.
Getting warm and cozy.
All done. 145 in 2hrs and rested for 1hr in oven, uncovered.
Looks good and moist. It was!! Did not get much smoke ring. I did not put much oak on the fire. I tried using a small smoke box with apple chips. Good mild smoke flavor.
