I have been smoking on my Lang Model 60 and seem to have a problem with my ribs falling of the bone? Any suggestions as to cook them closer to competition worthy? For friends and family they don't seem to mind but just thought I would ask. Thanks for any help. And I would post pics but I not sure I can as I only use my phone for Internet.

What kind of ribs are they, Baby Backs or spares and what cooking method are you using, Need more info.

I usually use spares, I try to use 3-2-1. But they are falling off the bone while they are still in foil. I try to smoke between 225-250.

Pretty much you just have to play with the numbers till you get what suits your tastes. Try 3-1.5-1 on the next try and see if that gets you closer I don't have my note book with me right now but I think I'm at 3-1.5-.45 or close to that

I don't think I have wrapped one rack of ribs in my Lang, try giving that a try, or don't foil them as long.

damn newbie mistake reviving an old thread! LOL
