Dicing up a sack of mini sweeties. You prob seen these in clear bags in the veggie area. Mini sweet peppers.

Wash em all off, lots of dirt on em.

Diced and in a zippy. Onion, garlic, cumin, parsley will go in the jars.
These will be a 15-17 day ferment.

Yeah , gonna be good . I grew some a couple years ago . Had a big yield . I dried what we didn't eat and ground into powder . Great flavor .

Yesterdays MRI for 1 hour, today another hour.

Anyways

Got the onions cut.

Qt jar and glass weight being sanitized for 45 mins.

Be back in few.
 
Got the onions, garlic, parsley flakes and cumin in at the bottom.
Start to layer in the peppers and cover with brine.

Put glass weight in and press down to push out any bubbles.

Leave some headspace in the jar.

Mark the slide to the 13th.
Store jar in a cool place and out of direct light. The brine will start to haze up in a few days.
This jar is a 10 day ferment.

Today is the opening and tasting day for the sweet fermented peppers.
