Labor Day cook!

Time to introduce the new neighbors to TATANKA.

Coming up to temp with a lil B and B lump started with some KBB. And pecan for the cook. kinda see some of that TBS in the pic. While that was getting going. Prepped up the long part of the cook. Two butts with a healthy coating of some rub I picked up at a festival this weekend. And had a cup of coffee while that was sweating in.

Got 3 slabs of spares to go later. Of course gotta do Dutch’s wicked beans, some smoked Mac and cheese, and jalapeño poppers. Gonna run some chicken thighs on the kettle with the vortex.

Zeke says “Pops it’s too durn early to be up. But it’s smelling good already!”

Power went off here for 3 hours just as things were finishing up.

pre-cook Mac and cheese and beans. Butts out of the smoker and resting. I can say that everyone ate their fill and we vac sealed enough for different meals.
