Picked up a pair of Whole chickens totaling about 13 lbs juices and all.
I trimmed off any unneccessary fat and stuffed some chilled butter under the sking and rubbed them down with Jeff's rub (recently purchased) and let them sit for 3 hours in the fridge.
I smoked them using apple wood for about 6 hours. My temps stayed nice and consistent at 230 degrees and I bumped it up to 300 for the last hour.
These had to be the best chickens I have done. I made some ABT's using powder ranch dressing in the cream cheese and topped them with BACON. As always they are amazing!
My brother in-law smoked his second ever pork shoulder so I made him a batch of SoFlaquers carolina mustard sauce. His Pork was amazing! He had a very sweet and tangy bark and I think he just coated it with Brown sugar and normal spices but then basted the thing with bbq sauce for the last hour.
Along with all the other items that the family brought over I ate way too much... (not complaining). Then we were able to watch one of the top Labor Day fireworks in the world! If you ever get down to Knoxville on Labor day for BoomsDay you will not be dissapointed. We were so close that the fireworks were above us.
What a perfect weekend... not to mention we celebrated 10 years of marriage.
