Hey guys, I want to make my first kielbasa. I have some elk and venison I want to use, so I found a recipe that uses beef, so I'll sub the wild game. I'm hoping for a traditional polish style kielbasa. Thoughts on this recipe? Thank you!

If I am reading that recipe correctly it says 12 oz ice for just over 2 pounds of meat. Seems like a lot of liquid to me. I usually use 1 oz liquid per pound of meat. That's just me though. Someone with more experience may know better but that could end up being pretty sloppy.
