Kielbasa, fresh stuffed brats and first overnight pulled pork

Made some Kielbasa, Brats with smoke cheese, onions,mushrooms in them.


Love when butts go on sale for $.99lbs




Did around 10 lbs of Kielbasa and 10lbs of brats


Used Hi Country Kielbasa mix



Added hamburger to the Kielbasa


Smoke cheese for the brats


Getting the  smoke cheese all chopped up



This is for the brats



Also added the mushrooms and some onions to the brats mix

Put smoke chicken breast on with the brats for dinner



Was using my UDS for butts for the pulled pork, so had to use my side firebox smoker

for the Kielbasa.

all cut up ready to be vac sealed.

Might as well show some of the butts I did for the pulled pork. This was the first time

smoking overnight. Got home around 1AM. had the UDS all ready so all I had to do was

lite some coals and start the AMNPS  and then throw the butts on. I don't worry about

the temp to much on butts so I set the ball valve wide open (it will stay around 275 to 300 )

Then off to bed. here a few pictures.
