So, I'm into my 22nd month of a low carb/keto/carnivore-ish/intermittent fasting diet. For some reason my weight AND muscle mass has increased by 5 lbs since May, but my measurements have remained the same. I'm not complaining. I'm 70 and losing muscle mass with age, aka sarcopenia, was happening to me.

If you research dark chocolate, it has all kinds of health benefits, especially mental acuity. Plus, there are times I'll get a carb craving. So, I created the following "fat bomb" recipe to eat after meals and if a craving hits. It takes only minutes to make and is SOOOO satisfying.

Keto Dark Chocolate Fat Bomb

Quick and easy to make.

Store in glass in refrigerator.

Makes 24. 60 cals each. 2g carbs (1g net). 6g fat. 1g protein.

Note: I forgot the Stevia on last batch and liked it!

At some point try with a scoop of IsoPure chocolate powder and half the cocoa powder.

Ingredients
½ cup nut butter of choice (128g)
6 Tbs grass-fed butter (84g)
6 Tbs cocoa powder (30g)
4 Tbs allulose (48g)
1 tsp Ceylon cinnamon (2.5g).
1 tsp pure vanilla extract
½ tsp instant espresso coffee powder
20 drops liquid Stevia (optional)

Directions
Line mini-muffin tins with 24 mini-cups. Set aside.

Place all ingredients in a 2 cup measuring cup, except the Stevia. Microwave for 30-45 seconds, but do not overcook!

Stir to blend completely and break up any lumps, then add the Stevia (if using). Stir to blend completely.

Pour equally into the sections of the muffin tin. Go as fast as you can because it will start to thicken near the end.

Place in the refrigerator for at least two hours.

Remove the sections and place in a glass container. Use a butter knife to unstick any cups that don't release.

Store in the refrigerator.
 
Man they look good... And I'm a sucker for chocolate....

But the only thing I have on the ingredients list is the vanilla... And buddy there is absolutly no more room for anymore spices... The cabinet door won't close completely now...

I used to make a lot of the fat bombs. Thanks for the reminder and recipe. I had one for key lime fat bombs but can't find it.
