Going to have a small gathering of my brothers friends for the Browns game tomorrow. It will be the first game I've watched without him in many years and I think he'll be looking down smiling at our gathering and probably mad about the game as we usually are. Anyway wanted to whip up something to take for sandwiches and decided to give this a go. I started with my base keto beef joes recipe and adjusted quite a bit due to the leaner chicken. First up 3 bell peppers finely chopped and 2 medium onions diced.
Sauteed until nice and soft.
Next is 5 lbs of 93/7 ground chicken browned ( did in two batches) Seasoned with 2T dark chili powder. 3T granulated garlic, 2T granulated onion, 1T medium grind black pepper and 2T kosher salt.
Mixed it all together and simmered a few minutes
Sauce next 28 oz can crushed tomatoes, around 9-10 oz tomato paste, 1.5 cups Brown Swerve, 1-2 T Dijon mustard, 5-6 T ACV, 3T Worcestershire sauce, Mixed up and simmered for around 30 minutes. Dusted with a little xanthan gum which I find helps keep the fat from separating out of the sauce. Finished pic
Nothing fancy but man it's pretty dang good and really can't tell it's chicken or sugar free. Adding this one to my files. Thanks for looking.
