Had some temp issues starting out this morning. ECB and minion method didn't cooperate. Pulled out some coals and just getting it on at 7 am. This is my first pork butt, did some ribs a few weeks ago.
7lb. Butt, scored fat cap, rubbed and wrapped last night. Haven't decided if I'm going to wrap around 165 or not yet. Will post some Q view pics on the smoke throughout the day!

Well fellas I completely dropped the ball and didn't take any pictures yesterday.... By the time I opened it from resting we dug right in and my hands were toi messy to take a pic. However, I ended up wrapping it at 165. But before I did I threw together a batch of Gary S's beans and put them under the butt on the smoker. The butt came off after 10.5 hours and after resting for an hour and a half in the cooler it was amazing! I couldn't believe how moist it turned out. Cooked between 250 and 275 most of the day. Wife loved it. Only pic I have is of the AMAZING beans. Seriously guys Gary S. is the man on these. You have to try then if you haven't.

Hey Thanks a lot for the complement   much appreciated

Giving credit where it's due on those. I think there must be something in the water up there. I had a friend from Whitehouse I met at SFA, and he had some great dishes he used to whip up. I miss my days out in East Texas! Beats the hustle and bustle down here any day.
