I'm new but I've been lurking for a week or two. Just got my first smoker, a MES. Ordered an AMNPS and a thermometer off the same site. Bought 5 pounds of dust though before I realized I should have bought pellets. Went to the butcher today and bought brisket, a pork butt, spare ribs, country style ribs and a couple of whole chickens. Did my first smoke last Sunday which was a roast (beef). Good flavor but dry. Underestimated the heating element and cooked it too high for the first hour and a half. Going to try a couple whole chickens tomorrow.
