Hi all, look forward to getting acquainted. I live in Highland Utah, I have been smoking and bbqing most of my adult life. I currently have two smokers, both of them get a workout. I have a Traegar Texas pellet smoker and an old, reliable Brinkman professional side box smoker. Right now, I am experimenting with smoking bison meat. I tried low and slow with the brisket but was not happy with the results. I could inject/marinade, but don't want to change the flavor of the bison meat too much with added fat, brine, etc. Anybody out there have experience with buffalo on the smoker?

My father in law has a pasture of buffalo surrounding three sides of our yard so have done quite a bit of bison meat. Keep it low 'n slow and be patient for it to hit temp; sounds like what you are doing. Really no different than beef, just less fat and more meatier tasting pending whose taste buds are taste testing... bison is good stuff for sure!
