I’m sure some here will be able to give advice on managing the temp in that smoker. My million dollar question, how the heck did you embed the video??
 
Congratulations on a successful rib smoke, they look real good.

I usually put my beans under the ribs.

Don't worry too much about the temp fluctuation. You should expect some when you need to open the smoker to add chips.

Looks good. Awesome first go! You could try making foil packets of chips. Just poke a few holes in the top. They won’t catch fire that way and you probably will have less temp swings. But don’t sweat the temp swings that much. Just roll with them!

Great job on the ribs. Temps of 225-250° is actually very good. Anything lower and you will be cooking way too long in my opinion.
Tried the chip route. Switched to a smoke tube with pellets. A nice steady smolder of thin blue smoke for around 4 hours. No opening the smoker to reload. (I don't spritz either.)
 
Good job! I'm with one eyed jack. Put your beans under the ribs, you'll be glad you did. Great way to your first cook!!
