So a cpl of years ago I started doing a brisket every July 4th....here's the product.  Sorry about the 1st pic...was taken w/ my cell.

Cooked on MES40 @ 225° 

Foiled at 165° and put into cooler @ 190°

....enjoy




 
Man...I barely got firsts lol.  It was damn near annihilated before I could wash my hands LOL

 You haven't learned yet.  As I slice I always take 2-3 of the best slices and HIDE 'em!
