So this weekend the wife and I went out to eat. We ended up at a BBQ place neither of us knew about or heard about a couple of towns over. They had brisket on the menu and since you don't see that much around here I got it. It was great. I've had brisket that's juicy and very good, also had dry brisket, also had some really greasy brisket.
I know that moisture in meat comes from rendered fat, render it too much and it gets dry, not enough and it's not tender.
So what I have been pondering is where's the line between juicy and just greasy?
Is it a really fatty piece that doesn't render properly or does it come down to the individual and their taste?
